Paging..... DataSet, DataReader or DataView??

Hi
I'm trying to get a paging DataGrid. I know this can be done a number of
ways.

DataReader, seems to allow the 'thinnest' transfer of data, but requires
that the number of records be presented to the DataGrid control, in order to
assist in working the paging.

DataSet.... Returns the entire dataset, but allows 'easy' paging, as the
number of records is apparent in the DataSet. The dataset appears to be
posted back each time, via the viewstate.... is this inefficient, with such
data??

DataView.... Is there a way??

I have my paging working with a Dataset currently, but need to take opinion
on when to use each method....

Also... Any hints on sorting would be nice....
