Is it possible to add a linebreak into one <option> in a
<select>-dropdown menu, so that the field won't get too long?

No. Or you can put as many linebreaks there as you like, but they are
treated as equivalent to spaces.

You might however find use for the <optgroup> element, or you could
consider using a set of radio buttons instead of a <select> element.
