Any tips or tutorials on how to make a website viewable on a Smartphone
(e.g. Sony Ericsson P800, Nokia 3650/7650 etc) not using WAP?
Are there any dimensions to take note of for page sizes/resolution etc?

Screen resolution is irrelevant.

Page size is irrelevnat.

Construct your page accordingly. That is, build it so it will work at any
canvas size.

forget about sizes/resolutions there are thousands and thousands of
different ones just as there are thousands and thousands of different
phones. basic rules: KISS. small basic images. no fluff.

For sites that are no more complex that textbook examples, I agree.
However, the more pragmatic and commerically oriented among us who want to
provide an optimal user experience beg to differ.

Apart from the tips above, also try Opera. When viewing a page with
Opera you can simulate smal-screen rendering by pressing shift+F11
