How to build a system to track specific keyword position on Google Search?

I found that Google Search Console do not track ALL the keyword ranking in "Performance -> Search Result." Some of our keywords that ARE RANKING, are tracked and showing in the Google Search Avg. Position, while some are not.

Is there anyway we can track the position for specific keywords?

Perhaps like building a python system etc. We're looking to build our own tracking system btw.
